I am surprised I dealt with just using two hyphens for so long to represent an em dash in the notes I write in Google Docs. I’m also surprised Google Docs doesn’t automatically alter the double hyphen into the em as done in MS Word.
The 3-4 different ways it is achieved are listed here on Stack Exchange.
The funniest solution is to just keep using the two hyphens and wait until the end to use find + replace. But I can’t stand for that.
The automated find and replace method is also wonky and inconsistent.
I think the best solution is just to commit OPTION + SHIT + – (hyphen key is the last bit there) to memory.
